I brewed up a Weizen 2 weeks ago. Here is the recipe:

4.00 lb Wheat Dry Extract
3.00 lb Pilsner (2 Row) Ger
0.75 oz Tettnang [4.80%]
1 Pkgs Hefeweizen Ale (White Labs #WLP300)

The yeast finally dropped yesterday, which seemed kinda long, but whatever. OG was 1055 and target FG is 1013. Tested last night and FG is 1002. I tasted/smelled the test wort and it smells nice like bananas and tastes like a hefe. I did notice that there were tiny bubbles of what seems to be carbonation in hydrometer tube before I took measurements. It would seem like the wort has started absorbing CO2 from yeast conversions because when I tasted it, it even seemed slightly carbonated. If this is the case, would that affect my FG readings? I do spin the hydrometer to free up air bubbles. The wort doesn't really have a strong alcohol taste so I'm not sure if the ABV really is 6.9%.

If bubbles were affecting your readings they would raise the gravity reading, not make it lower.  Hydrometers are also normally calibrated for 60F and the readings need to be adjusted if the sample was taken at a different temp. 

 

On another note, 1.002 is extremely low.  If that's an accurate reading something else is going on.

Have you checked your hydrometer in plain water? Temperature correction is minor. 1.002 read at 80F is actually 1.004. Someone on whitelabs.com stated they had a 1.009 FG using WLP300. It is not uncommon for small amounts of co2 to offgas.

Did you check your FG with temp converted?  I know that my hydrometer wants my liquid temp to be at 60 degrees F for an accurate measurement.  As for the bubbles, I have that sometimes, I just usually let it sit in the fridge until it comes to temp and it usually dissipates any bubbles that might be present.

I've never tested the hydrometer in water. I did however keg this batch and drank the crap out of it last night. whatever the problem is, it didn't really affect the taste. if anything, it needs more head retention. I'm fine with it lol. Thanks for the replies!
Update on this, I brewed an APA today and tested and its SG was way lower than it should have been. Apparently the bottom glass bulb part of the hydrometer had broken, so the weight was loose and letting wort inside. So, that was the problem. Just thought it was funny!
