Brewed up a batch of Brewers Best India Black Ale with Rob and the gang at his house for the TV cameras 10 days ago. Brewing went great with a 1.066 OG result which is right in the range.

 

Fermentation seemed to have been complete with no bubbling happening. Now I am ready to add the dry hops but the FG is only at 1.022 but needs to be between 1.014 - 1.016.

 

My question is do I hold off on dry hop until the FG is in the right range? or do I add the dry hop and then check it in four days to see if the FG gets to where it needs to be?

 

I am using a plastic bucket as my fermenter so am worried about having the beer sit in its yeast for too long.

 

FWIW the brew tastes and looks amazing. Hoppy Stout, hell yes please!

 

Suggestions appreciated.

One easy way to maybe get things going again is to swirl the fermenter a little bit.  This will get the yeast back into suspension and possible have it attenuate a little lower.
